   Akcamper posted on Coffee Klatch  Happy 4th everybody! Did anyone make my chili recipe? There were only 2 people entered here, and I still can't believe that mine came in second! I had a bite of the other, and the beans were not even cooked done! And it was a lot spicier than mine too! I think the judges were insane!

   Akcamper posted on Recipes  Ok everybody, here is my award winning recipe for chili. Where it says Top Secret, I use this when browning the meat. The jack Daniels really makes it taste great,the alcohol cooks away and just leaves a great taste!

makes a double batch
Ingredients:

2 large onion finely chopped
8 cloves garlic, minced
4 Tbsp tomato paste
4 Tbsp butter, cut into pieces
2 tbsp dried oregano, crushed
2 tsp ground cumin
4 tsp crushed red pepper
chilli powder to taste
2 (14.5 oz ) can whole peeled tomatoes with liquid, chopped
2 lb. lean ground beef
2 (15.25 oz ) can kidney beans, drained and rinsed
Jack Daniels whiskey
some Top Secret
2 tsp of sugar
smoked Tobasco

Directions:

Brown the ground beef w/ 1/2 large onion, 2 cloves garlic, and 1 tbsp chilli powder. Set aside.
In a large skillet over medium heat, combine remainder of onion, garlc, and tomato paste. Cover and cook for 5 minutes.
Stir in butter until melted. Stir in flour, oregano, cumin, red pepper, chilli powder, tomatoes, beef, and Jack Daniels. Cook uncovered for 8 minutes, stirring occasionally.
Stir in the beans and cook for another 4 minutes, stirring occasionally. Salt, pepper, and other spices to taste.
Simmer covered at low heat until serving time.

   Akcamper  I have tasted it with all kinds of meat, moose, caribou, venison, I like it best with beef. I like to make it not too hot at all so you can taste the spices, especially the whiskey!

   Betty Jean  AK, I have used the Top Secret Steak Rub for just years on our boneless ribeyes and hamburgers. In fact, last time bought the large container to refill the smaller one. And I have been signed up to get the recipes for years too. Looking forward to making the chili. Thanks.

   Carolina Kat  Wow - can't wait to try it. One question: Does the Jack Daniels in this recipe act like wine in most recipes? (You drink some, and you cook some, then you drink some, and try to remember that you are cooking... )

Maybe nobody else has this problem?

   Betty Jean  CK, I'm one of those who firmly believes it's 5 o'clock somewhere, ifyouknowwhuti'msayin. I like that 'one for the recipe, two for me' thingie too. I'm going to make my 'housewife's popsicle' today which uses rum and fruit juices and jello to refresh us while we float in the pool this summer.

   Akcamper posted on Coffee Klatch  Every year on the 4th, the town has a parade that ends up in my campground, and free hamburgers and hotdogs and games for the kids. Also we have a chilli cooking contest that I have won three times and placed second twice! But no fireworks cuz it never gets dark enough!

   Rollingcow  I have been told by vets who specialize in zoos that moose are the Hoodini's of the animal world. They have very flexible lips and can open the gates and doors of their pens. Makes me wonder why Bullwinkle always needed Rocky to help him out when he was locked in.

   Akcamper posted on Coffee Klatch  Hi All, I was walking Jake around the campground last nite when I saw the mama moose lying down only 5' from the road! I took Jake back to the motorhome before he saw her, and got in the Jeep and got some good pics up close, but the babies were not with her. On the way back to the motorhome I saw them, they must have been 100 yards away from mom! They are getting big, and brave to be that far away from her!

Hi all, the fish and game closed the river for fishing today and the campground emptied right out! I have not seen mama moose and the twins since Memorial day. Maybe they will come back with no people here.

   Akcamper  King salmon fishing is a big deal here, it's too bad the numbers of fish just are not here this year. On a good weekend my campground will be full of campers. The fish are going up river to spawn, so closing the river to fishing helps more of them to make it up river so there will be more of them in the future since salmon will return to the same river to spawn that they were hatched in.
